Carrot Walnut Omelet

Inspired by a fantastic breakfast joint in East Van (Roundel Cafe) I took a stab at making my own variation of my fav dish and it was surprisingly tasty with my healthier version.

Ingredients:
Egg Whites
Cinnamon
Walnuts (blended for smaller bits)
Shredded Carrots
Provolone Cheese
Salt & Pepper

Thats all kids! So easy, so heathy and stood the test of my fiance who is very particular about our weekend breakfasts :)
